CRMR Bison Sirloin Tip Roast Recipe

A delicious Bison Sirloin is a great option for those looking to try something new and experience Rocky Mountain cuisine at its finest. Bison tastes similar to fine beef with a slightly leaner taste and texture. This recipe features bold tastes, fresh ingredients and is sure to impress you and your dinner guests.

Ingredients: 

  • 1 (3 1/4 lb) CRM Ranch Bison Sirloin Tip Roast
  • CRMR Green Peppercorn Demi Glaze
  • ½ litre CRMR Kitchen Veal Stock
  • 1 medium carrot (large dice)
  • 1 medium yellow onion (large dice)
  • 4 sticks of celery (large dice)
  • 1/2  tablespoon paprika
  • 2  teaspoons kosher salt or 2 teaspoons sea salt or 1 teaspoon salt
  • 1 teaspoon dried oregano, crushed
  • 1 teaspoon dried thyme, crushed
  • 1 teaspoon ground black pepper
  • 1⁄2 teaspoon onion powder
  • 3  tablespoons olive oil

Directions:

  1. In a small bowl combine paprika, salt, oregano, thyme, black pepper, onion powder and Stir in oil until well combined.
  2. Trim the excess fat from roast, spread oil mixture over surface of meat. Place meat on a bed of vegetables, making sure the bottom of the roast is not touching the pan.
  3. Add half of one CRMR veal stock, roast in a 425 degree F oven for about 15 minutes, or until you see some browning on the surface of the roast. Reduce oven temperature to 290 degrees F. Roast 60 to 65 minutes more or until meat thermometer registers 125 degrees F.
  4. Remove roast from oven. Cover roast tightly with foil and let stand in pan  for 15 minutes. The temperature of the meat after standing should be 135 degrees F. (medium rare).
  5. Thinly slice meat across the grain to serve. Serve with CRMR green peppercorn demi glaze and roasted pan vegetables.
