Celebrate Cinco de Mayo with a Fast and Easy Family Taco Night

Cinco de Mayo is fast approaching, and this lively celebration of Mexican culture wouldn’t be complete without some tasty food and an ice cold margarita.

Bring the whole family together May 5 to create your own Cinco de Mayo party. Nothing could be easier than preparing custom tacos that everyone can enjoy.

Here’s what you will need to get your Cinco de Mayo party started:

Blackened Fish Taco Recipe (Serves 4)

Ingredients:

  • 1 lb white fish (halibut or snapper)
  • ¼ cup canola oil
  • 2 limes (juice)
  • ½ cup chopped cilantro
  • ¼ head shredded white cabbage
  • ½ cup Sour cream
  • Thinly sliced red onion
  • CRMR salsa verde
  • CRMR Blackening Spice
  • Salt / pepper to taste
  • Chili powder (ancho or chipotle) optional
  • 8 flour or corn tortillas

Directions:

  1. Preheat a cast iron pan (med-high heat) add canola oil.
  2. Season the fish with salt, pepper and chili powder, or CRMR Kitchen Blackening Spice, fry on med heat browning both sides of the fish 2-3 mins per side.
  3. Place on paper towel to soak up the reaming oil, squeeze one lime worth of juice over the hot fish.
  4. Warm the tortillas in the oven (set on broil).

The Perfect Margarita Recipe

Ingredients:

  •  0.75 ounces freshly squeezed lime juice
  • 1 ounce Cointreau or triple sec
  • 1.5 ounces tequila
  • Kosher salt (optional)

Directions:

  1. Add the ingredients to a shaker filled with ice and shake.
  2. Strain into a chilled cocktail glass or rocks glass filled with fresh ice.
  3. Garnish with a lime wheel. (If desired, rim glass with Kosher salt before adding ice and margarita.)
