Gluten-Friendly Recipes from our Kitchen to Yours

CRMR Kitchen Sausages and Recipes We Love

A great addition to a gluten-friendly pasta dish, or a spicy soup, the CRMR Kitchen offers a range of delicious sausages made without gluten to try, including CRMR Pork Chorizo Sausage, CRMR Toulouse Sausage, CRMR Lamb Orange & Mint Sausage, Elk Cranberry Sausage, Wild Boar and Cilantro Sausage, Roasted Red Pepper Chicken Sausage.

Here are a few of our favorite sausage dishes to get you started:

Chicken and CRMR Chorizo Paella

Serves 4

50 Minutes Cook Time

What you will need:

  • 2 Garlic Cloves
  • 1 Yellow Onion
  • 1 Small Carrot
  • 75 g CRMR Pork Chorizo Sausage
  • 2 Chicken Thighs, Skinless and Boneless (Tip: Substitute prawns, steamed clams or mussels for delicious twist).
  • Olive Oil
  • 1 tsp Tomato Paste
  • 750 ml CRMR Chicken Stock
  • 300 g Paella Rice
  • 100 g Frozen or Fresh Green Peas.
  • Tip: Roasted yams add a different texture and taste.

Directions:

  1. Peel and finely slice the garlic, peel and roughly chop the carrot and onion. Roughly chop the chorizo and chicken thighs.
  2. Add a lug of oil into a large lidden shallow casserole or paella pan on medium heat, add the garlic, onion, carrot, chorizo, chicken and paprika. Fry for 5 minutes, stirring regularly.
  3. Remove seeds and chop the pepper, then add to pan for additional 5 minutes.
  4. Stir in the tomato paste, add chicken stock, and then add the rice. Stir for a few minutes so it absorbs the flavors.
  5. Add 750ml of boiling water and add salt and pepper to taste. Put lid on and bring to a boil for 15 minutes, stirring occasionally.
  6. Add peas and cooked seafood if using. Replace lid and cook for additional 5 minutes.
  7. Add fresh chopped basil as a garnish and enjoy!

CRMR Pork Toulouse Sausage Cassoulet

Serves 4-6

What you will need:

  • 100 g Dried Wild Mushrooms
  • 8 Slices CRMR Smoked Bacon
  • 1 tbsp Olive Oil
  • 3 Sprigs Fresh Thyme
  • 1 tsp Minced Fresh Rosemary
  • 1 Large Red Onion
  • 2 Garlic Cloves
  • 1 Carrot 4 Celery Stalks
  • 2 Bay Leaves
  • ½ Bottle of Red Cooking Wine
  • 3x 400 g Canned Plum Tomato
  • 2x 400 g Canned Cannellini Beans or Navy Beans
  • 16 CRMR Pork Touloise Sausage
  • 1 Gluten Free Stale Loaf, crust removed (optional)

Directions:

  1. Preheat oven to 400°F
  2. Soak Wild Mushrooms in 600 ml hot water until soft. Remove mushrooms from water and chop. Set mushroom water aside as you will need this later.
  3. Cook bacon in large cassoulet dish, add chopped red onion, carrot, celery, garlic, cook until soft.
  4. Tie fresh herbs with butcher twine and add to pan.
  5. Add chopped mushroom to pan and cook for 4 minutes. Add red wine and reduce by half.
  6. Add canned tomatoes, canned beans and the mushroom liquid.
  7. Bring to boil and cook for 15 minutes.
  8. Cut sausages into four pieces and place onto of beans.
  9. Optional: Cut up loaf into large piece and then place on top.
  10. Bake in oven for 40 minutes until dish is golden brown.
  11. Remove from oven and remove fresh herbs tied with string.
  12. Cool and serve. Enjoy!

CRMR Lamb Orange Mint Sausage with Lentils and Feta

Serves 4-6

What you will need:

  • 2 CRMR Lamb Orange and Mint Sausages
  • 1/3 Cup Green Lentils
  • 3 Garlic Cloves
  • 2 Carrots
  • 1 Poblano Pepper
  • 1 Red Onion
  • ½ Bunch Green Onion
  • 1 Fresh Orange and Zest from the orange
  • Fresh Mint
  • 2 tbsp Red Wine Vinegar
  • ¼ Cup Feta Cheese

Directions:

  1. Cook lentils in salted water for approx. 25 minutes, or until soft. Drain and keep warm.
  2. Cook the sausages thoroughly and keep warm.
  3. Chop carrots, onion, garlic, poblano pepper. Zest the orange and then chop the remining orange into slices.
  4. Add lug of olive oil to large sauté pan and add carrots, onion, garlic. Cook until these ingredients are soft.
  5. Add chopped poblano pepper, lentils, feta, vinegar, mint and orange slices.
  6. Top with sliced cooked sausages and orange zest and enjoy!

Salad Dressings and Vinaigrettes

Great for dinner parties, potlucks or for a quick lunch or supper, salads are truly brought to life when drizzled with a delicious dressing or vinaigrette. Whether it’s a tossed green, spinach or quinoa salad, the CRMR Kitchen has a number of tasting gluten-friendly dressings that perfectly compliment any salad.

Blood Orange Honey Dressing

Bright and vibrant in colour and taste, the Blood Orange Honey Dressing is made with blood orange puree, apple juice, honey and citrus zest. Delicious with spinach salad and grilled chicken, or drizzled on rice and roasted veggies.

Mustard Melon Vinaigrette

Sweet and tangy, the Mustard Melon Vinaigrette lets you enjoy the taste of our delicious mustard melons drizzled right on your salad. Made with cantaloupe, mustard melon juice and flax seed, we recommend pairing it with a quinoa and veggie salad.

Saskatoon Berry Rhubarb Dressing

A perfect addition to your spinach and goat cheese salad, this sweet dressing is made with Saskatoon berries, blueberries and red pepper jelly. Serve at your next dinner party or enjoy on the patio!

Balsamic Vinaigrette

This classic dressing pairs well with any garden or tossed salad, and is made with shallots, garlic, Dijon mustard, vinegar and olive oil.
